Orange Apricot Soup

2 17 oz. cans apricot halves
1 tsp.  finely shredded orange peel
1/2 cup orange juice
1/4 tsp. ground cardamom*
1 8 oz carton plain yogurt

Drain apricots, reserving syrup.  In blender container place reserved
syrup and half the apricots.  Add orange peel, juice and cardamom.  
Cover and blend until smooth.  Add yogurt and blend until just combined. 
Cut up remaining apricots and stir into the blended ingredients.
Cover and chill.  Garnish with thin orange slices if desired.  Serves 8-10.

* Cardamom is really expensive.   I use it often enough to have some on
hand.  If you don't wish to make that purchase you can substitute nutmeg.
