Oatmeal Cashew Bars
1 cup Quick Cooking Oats
1 cup Flour
2/3 cup Brown Sugar
1/4 teaspoon Salt
1/4 teaspoon Baking soda
1/4 cup Vegetable Oil
1/4 cup Apple Juice
8 ounces Caramel Topping
1/2 cup Cashews, chopped
Preheat oven to 325 degrees F. Combine first 5 ingredients in a bowl.
Mix with your hands until no lumps remain. Drizzle in
oil and fruit juice and mix
until evenly moistened and crumbly. Press all but 1/2 cup of mixture into a
lightly
oiled 9 x 13 inch baking dish. Spread caramel over top and sprinkle with
reserved
sugar mixture and nuts. Bake 30-40 minutes or until golden. Let cool
before
cutting into bars.
