1/2 cup butter or margarine, softened
1 cup firmly packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup mashed ripe bananas
1 3/4 cups all-purpose flour
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granola

In a large bowl, cream the butter and sugar with an electric mixer at
medium speed. Add the egg, vanilla, and bananas, beating until well blended.
In a separate bowl, combine flour, cinnamon, baking soda, and salt.
Gradually add to banana mixture; mix until well blended. Stir in granola. (Mixture
will be softer than most cookie dough, but it won't spread much when baking) Drop
by the tablespoon on greased baking sheets about 2 inches apart. Bake at 375
for 10-12 minutes. Remove to a wire rack to cool. Makes about 4 dozen
