Fiesta Chicken
2 cups chicken, cooked and diced
1/2 cup chopped onion
1 can cream of mushroom soup
1 cup salsa (a roasted type tastes best)
6 tortillas cut into 1" squares
1 cup grated cheddar cheese
Combine first five ingredients, plus 1/2 cup of cheddar cheese in large
skillet. Cook on stove top until hot and bubbly. Pour into a greased
baking dish. Top with remaining 1/2 cup of grated cheddar cheese.
Bake at 350 degrees for 30 minutes. Serve with a tossed, green salad.
