I have no idea where this colorful name came from, but the dish is a great success
and since it uses hard boiled eggs, some of the work can be done in advance.

Eggs Furbeck

3 tbsp butter
2 tbsp flour
1 cup milk (can be low or non-fat)
1/2 tsp salt
Dash of pepper
Freshly baked biscuits or toasted English muffins
1/2 cup medium cheddar cheese, grated
4 hard-boiled eggs, sliced
4 slices bacon, cooked and crumbled

In a saucepan, melt butter and mix in flour.   Gradually blend in milk,
salt and pepper.  Cook, stirring until thickened.  Add cheddar cheese
and stir until melted.  Gently mix in the chopped
eggs and crumbled bacon.  Serve hot on biscuits or muffins.
