EASY PARMESAN CHICKEN
2 whole chicken breasts (skinned, boned) cut in 1/2
1/2 c breadcrumbs
1 pkg. Campbell's dry tomato soup (cup of soup in a pkg.)
1/3 cup Parmesan cheese, grated
1 T. minced parsley
1-1/2 tsp. salt.
3/4 tsp. pepper
1/4 cup butter, melted*
1 clove crushed garlic
2 T lemon juice
1 tsp. paprika
Blend crumbs, cheese, parsley, soup, salt & pepper. Combine butter,
garlic and lemon juice.
Dip chicken in butter mixture, then into crumb mixture, coating well.
Place in baking dish and sprinkle with paprika.
Bake in 350 degree oven for 1 hour.
*I use egg whites & milk instead of dipping in butter sometimes.
