Deidre's (Chicken & Rice) Casserole

2 cups rice
2 cups water
2 large boneless parboiled & cut up chicken breasts
1 large package frozen chopped broccoli
1 family size can cream of mushroom soup
1 16 oz container of sour cream
1 package of shredded orange cheese

Put rice & water in the bottom of a 13 x 9 baking dish.
Layer parboiled chicken pieces over rice.
Layer broccoli over chicken.
Mix sour cream and mushroom soup together.
Then spread mixture over broccoli layer.
Bake at 375 degrees for 45 minutes then it should be bubbling a bit.
Sprinkle shredded cheese over the top and pop back into oven until melted.
You can use more shredded cheese if your a cheese lover.
Also if you'd like less fat try fat free sour cream and reduced fat mushroom soup and less cheese in which
the casserole is still fantastic.
The kids love this one too.
