Crockpot Pumpkin Pie Pudding

15-oz. can of solid pack pumpkin
12-oz. can evaporated milk
3/4 cup sugar
1/2 cup buttermilk baking mix (such as Jiffy)
2 eggs beaten
2 tablespoons melted butter
1 tablespoon pumpkin pie spice
2 teaspoons vanilla extract
Whipped Cream or Cool Whip

Mix together all ingredients except the whipped cream or cool whip.
Pour into a greased slow cooker. Cover and cook on low 6-7 hours.
Serve topped with whipped cream or cool whip
4-6 servings
