Cream Cheese Mints

3 oz. cream cheese, room temperature
3 cups powdered sugar, divided use
5 drops mint flavoring
5 drops green food coloring
1/2 cup superfine sugar

Line a cookie sheet with wax paper.  Set aside.  In a large mixing bowl, beat cream cheese
until soft. Gradually beat in 2 1/2 cups powdered sugar.
Dust a cutting board with the rest of the powdered sugar.  Remove mixture from bowl and
knead on a cutting board until a dough-like consistency is achieved.  Add more powdered
sugar if the consistency needs adjusting.  Add flavoring and food coloring.
Pinch off small sections of dough and roll into balls.  Roll balls in superfine sugar.  Store
in the refrigerator in an airtight container.
