Cranberry Pear Spiced Soup
1 cup chopped cranberries
2 cups cranberry juice
3 ripe Bartlett pears, peeled and chopped
1/2 teaspoon ground cinnamon
1 teaspoons freshly grated nutmeg
2 thin slices fresh ginger
sour cream for garnish
Simmer the cranberries in the cranberry juice for 10 minutes.
Drain the cranberries, reserving the juice. Place the cranberries,
pears, spices, and ginger in a food processor. Process until smooth.
Slowly add the reserved juice with the motor running. Mix until
the soup is well blended. Serve the soup cold, adding a
swirl of sour cream if desired.
