Chicken, Orzo and Fruit Salad

4 skinless, boneless chicken breasts (poached and cooled)
1 box orzo
2 cups chicken broth (homemade or canned)
1/2 cup water
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/2 cup dried apricots, chopped
1/2 cup dried sour cherries
1/2 cup dates, chopped
1/3 cup red onion, finely chopped
2/3 cup slivered almonds
Bottled salad dressing of choice

Combine chicken broth, water, ginger and cinnamon in a saucepan.
Add orzo. Cover pan and cook according to package directions.

Dice chicken breasts. Combine chicken, orzo, apricots, cherries,
dates, onion and almonds in a large bowl. Add dressing and toss to blend.
Cover bowl and refrigerate for several hours.

At serving time, toss to blend.
