Chicken Polet

Chopped chicken
(Skin and boil a whole chicken. .
Debone and chop up chicken. Save broth.)

1/2 cup Mayo
1 bag corn bread stuffing
1/2 cup butter melted
1 1/4 cup chicken broth
1/2 cup fine chopped celery
2 eggs beaten
1/2 cup milk
3/4 teaspoon salt
1/2 cup fine chopped onion
1 can cream of mushroom soup
grated cheddar cheese


Mix all the above (except soup and cheese) and put in 2 qt casserole
pan. ( can be done the night before and left in fridge. Before
cooking
let set out for 1-2 hours.) Add mushroom soup on top and bake 350* for
35 minutes. Top with cheese and bake 10 more minutes or until melted
and bubbles.

Wonderful, even my picky kids love it.
