CHICKEN ENCHILADA CASSEROLE
INGREDIENTS
2 Chicken Breasts cooked and shredded (Microwave for shorter cook
time)
1 Can of Green Chilies
3/4 Cup of diced Green Onions
8 oz. Sour Cream (small)
1 Can Cream of Chicken Soup
2 1/2 Cups of shredded Monterey Jack Cheese and Cheddar combined.
18 Corn Tortillas
DIRECTIONS
Preheat oven to 350 degrees.
In a large glass mixing bowl combine all ingredients except 1 1/2 cups
of Cheese and the Tortillas. In a 9x13 inch pan layer 6 buttered
Tortillas (Pam can also be used). Cover tortillas with an even amount of Chicken
mixture. Sprinkle some of the leftover cheese and then apply another layer of 6
buttered Tortillas, mixture and the rest of the Cheese. (Feel free to
use more cheese to your liking. Top of casserole should be covered.) Bake
at 350 degrees for 10 minutes or until Cheese on top is melted.
This Casserole can also be made in a round casserole dish using the
same layering techniques with single Tortillas.
