This recipe was passed on to me from my mother. It is great for large
gatherings & as a covered dish & tastes even better as leftovers. Of
all the recipes given to me from my mother, this is my favorite!
Chicken & Yellow Rice
1 large chicken, cooked & deboned
1 large can of peeled tomatoes, undrained
2 yellow onions, chopped
1 bell pepper, sliced into rings
1 garlic pod, diced
1/2 cup oil
2 cups long grain white rice (not Minute rice)
2 teaspoon turmeric
3 whole bay leaves
6c. chicken broth (use liquid from cooking chicken)
Sauté onions, bell pepper & garlic in oil. Place chicken in bottom of
Dutch oven. Top with sautéed vegetables.
Add tomatoes with juice. Sprinkle rice over top. Mix broth with
turmeric & add bay leaves. Pour over rice slowly. Do not stir!
Bake @ 350 degrees for 35 minutes without lid. Bake an additional 35
minutes with lid. Do not stir! Serves 8-12 large appetites.
