CHEESY TORTILLA CASSEROLE:
1 tbsp. vegetable oil
1 can cooking spray
1 small onion, minced
1 1/2 lbs ground beef
10 flour tortillas
1 jar mild taco sauce
1 1/2 cups shredded cheddar cheese
Salt and pepper to taste
Sauté onion in vegetable oil in frying pan. Add ground beef with
salt
and pepper and brown, then drain. Fill each tortilla with 2 TBS's.
of
ground beef mixture and fold up sides of tortilla to close.
Spray 9X12 baking
dish with light coat of cooking spray and line
with tortillas side by side.
Cover with a layer of taco sauce and then a layer of cheddar cheese.
Bake in
350 degree oven until cheese is melted (about 15 minutes),
then enjoy!
