BROCCOLI TOFU PIE

2 READY MADE 9" PIE CRUSTS
1 POUND EXTRA FIRM TOFU (DRAINED, CUBED)
1 1/2 CUPS BROCCOLI FLOWERETTES
1 12-16OZ CAN CORN
1 12 OZ CAN FIRE ROASTED STEWED TOMATOES
1 SMALL ONION - DICED
1 RED BELL PEPPER - DICED
1 CUP GRATED PARMESAN CHEESE
3 CLOVES GARLIC CRUSHED ( 1 TSP GARLIC POWDER)
SALT, PEPPER, PAPRIKA TO TASTE
1/2 CUP BREAD CRUMBS

IN LARGE SAUTEE` PAN, ON MED HEAT, MELT 1/2 STICK OF BUTTER, ADD
GARLIC LET SIMMER A BIT THEN ADD CUBED TOFU AND LET BROWN ON
ALL SIDES AND THEN ADD ONIONS AND BROCCOLI, SAUTEE ABOUT 4 MIN
THEN ADD BELL PEPPERS CORN, TOMATOES AND SEASONINGS, TURN OFF
PAN LET COOL 5 TO 10 MINUTES THEN STIR IN CHEESE. SPOON MIXTURE INTO
PIE CRUSTS AND TOP EACH EVENLY WITH HALF OF THE  BREAD
CRUMBS AND MORE PARMESAN CHEESE. COVER WITH FOIL AND BAKE IN OVEN THAT
HAS BEEN PRE HEATED TO 425 DEGREES FOR ABOUT 10 MINUTES UNCOVER AND BAKE
FOR ANOTHER 7 TO 10 MINUTES WATCHING TO MAKE SURE CRUMBS DON'T BURN. LET
COOL AND ENJOY.

*NOTE*: NOT SURE THE KIDS WILL GO FOR TOFU? TRY MARINATING
IT IN A-1 STEAK SAUCE BEFORE SAUTÉING.
